Cilantro Lime Chicken Tacos in the Crock Pot!

Cook Time 4 hours, Serves 8!


2 pounds skinless, boneless chicken breasts

1 packet of taco seasoning (low sodium)

1 160z jar of salsa (Use your favorite that fits your macro allotment)

1/3 cup of fresh chopped cilantro

Juice from two limes


Place the chicken breasts at the bottom of the crock-pot. Sprinkle taco seasoning over the top and cover with your choice of salsa, then lime juice and cilantro

Place the lid on and cook on high for 4 hours, or 6-7hours on low. Your choice! Once done, remove the chicken and shred. Moisten chicken with small amounts of the juice from the crockpot..somewhere between 1/2 to 3/4 of a cup of juice.

Serve with corn or flour tortillas. If you can not have that many carbs, you can also use butter lettuce as it makes for a great carb-free option. For toppings I like to add shredded lettuce, diced tomatoes, avocado, cheese, or even sour cream….etc… Given your set of numbers look for low fat cheeses, or low carb tortillas. You can also use this chicken over rice and create a Chicken Taco Bowl! The ideas are endless really!!



Depending on your choices above the macros will adjust some, however, there are 8 servings and per serving the chicken will be around Protein 24, Carb 6, Fat 3. To find your exact macros, add up all your items from the ingredient list above based on your purchases and then divide each Protein, Carb, Fat totals each by 8!
